How to feed 4-6 people, Vegetarian Chili, for around $3!

This is a sure fire winner when money is tight and nights are cold - hot vegetarian chili to feed the whole family!

You will need these simple ingredients:

1 large carrot
1 large onion
1 celery stick
1 can black beans
1 can kidney beans
1 or 2 cans of chopped tomatoes (depending on how saucy you like it!)


You will also need a teaspoon of oregano
A dash of salt
A sprinkle of pepper
A teaspoon (or more depending on your taste) of chili powder
A teaspoon of cayenne pepper

Create your chili:

Chop all fresh vegetables, add them to a pot and gently cook in a sprinkle of oil until slightly soft.

Rinse off the beans and add them to your vegetables.

Add the chopped tomatoes and mix well.

Sprinkle in the spices to taste - add as little or as much as you prefer! I like it hot hot hot, so in it goes!

Stir, turn to a low heat and cook until all vegetables are soft and tasty.

The longer you cook it, the thicker it will get if you leave the lid off of your pot! It is up to you when to serve it - depends on your taste but I like it thick!

Note: If you like it more tomatoey add some tomato paste!

Serve on a bed of rice or with tortilla chips!

Quick, perfect, cheap, chunky vegetarian chili!
