This week I decided to see what it would be like to make a yellow cake mix with a can of organic pumpkin! I thought it might work out, seeing as everyone seems to be able to make a cake mix with just about anything these days, thanks to the wonders of Pinterest and global sharing!!
I popped open the box of cake mix, crunched open the can of pumpkin and mixed the two together with a half cup of water for moisture and a pinch of cinnamon and nutmeg! I then split the mix between two cake tins and let the kids lick the bowl! There are NO EGGS in this so you can let the kids go to town!!
I put both of the cake rounds into the oven and kept an eye on them closely! I was not overly sure how long they were going to take to cook because of the pumpkin, but actually it only took 5 more minutes than if I had mixed the cake mix as directed!
When the cake was firm to the touch I took it out and left it on the side to finish cooking through - too much time in the oven and I am pretty sure you will end up with a chewy cake, so use your instincts and feel as you go along to suit your needs and preferences!
When COMPLETELY COOLED, place one half of the cake on a plate, frost the top lightly. place the second half of the cake on the top and frost the entire top of the cake and around the sides. Be generous!
Place in the fridge for an hour or so to firm up the frosting and VOILA! Cake is ready to go!
Serve in thin slices as it might be quite heavy, but it is totally flavorful and moist! It is also one that I am sure you will want to make over and over again!
Serves well with a nice cup of tea!!
