Gluten Free Pancakes Using King Arthur's gluten Free All-Purpose Baking Mix!

I don't need to eat a gluten-free diet, but I do like to dabble in gluten-free foods as I have a couple of friends who DO have to eat such a diet and I like to find new ways to bring food to the table that suits everybody's taste.

I found this King Arthur Flour: gluten free all-purpose baking mix at my local discount store for a whole 33 cents (usually around $7 online) and couldn't pass up the opportunity to give it a try!

My daughter is a lover of pancakes and so I decided to follow one of the [many] recipes on the back of the box and see how the pancakes would turn out! I actually omitted milk and used water instead, though, as I have a lactose intolerance and thought "in for a penny, in for a pound" to see what might happen! 

I followed the instructions on the box, cooked up the pancakes in some light oil and served them stacked with some mixed fruit jam and vanilla bean curd. 

The result? Actually, pretty good! Even with water instead of milk, these pancakes fluffed up pretty nicely and there was no bitty texture! They stuck a little to the pan, but that didn't matter if you got to them quickly and kept a good eye on them.

My daughter didn't notice any difference between these and her regular pancakes, which I usually make from scratch and she did, in fact, eat them all! I had a few, too, and I really did enjoy them and think that this has to be one of my favorite gluten-free mixes to date and I am happy to have stumbled over it! I do hope they have it on this ridiculous 3 for a buck sale again pretty soon as I would swoop it up in a hearbeat! - The perks of living close to a discount store are many, but the downside is that the items you might find there every week are not constant, but when they're there it is buy buy buy!!

Spoiler Free Look at the Hannibal Season 2 Finale! #andanicechianti

Well, my entire insides are out in the world, up in the air and possibly on their way to being incorporated into a Hannibal pie as I slowly start the recovery process following this AMAZING Season 2 Finale!

For sure, I predicted pretty much nothing from tonight's show other than Hannibal might be walking away - and let's face it, he has to because well, it is HIS show! We have to remember that and BOY! did  "THEY" remind us?

There were so many twists and turns to tonight's extremely well played out episode that just when you thought you had it all, just as you took the bad with the even worse, something fantastic happened just to be served up as a main course with a big old glass of champagne!

I honestly can not quite wrap my head around it - nor am I surprised and I didn't fathom that we would be leaving it out there in such a way that we couldn't even guess if we wanted to [the future of this show's arc].

Hannibal HAS to bring in some major awards as the direction has been just flawless and the script played out to a "T" - Hannibal is a show that is NOT afraid to get down and dirty and the shocking game of guess-who that saw this season out just goes to show that the pay-off for the entire show was there, it worked and we have ALL be played a little by the man, himself! I may even feel a little scorned!

I have NO IDEA who is going to make it back to next season but I know that someone is going to be cleaning up a whole lot of carnage between now and then, for sure!

I LOVE LOVE LOVE that they have lifted Hannibal up to head towards the direction of the Hannibal Lecter that we already knew [and loved] prior to this show and if my imagination has anything to do with it we are in for a HUGE change and a BUMPY RIDE in the [now] ridiculously anticipated season 3!!!

Hannibal Season 2 Finale - “Mizumono” airs Friday, 23rd May, 2014 on NBC at 10pm Est.

This past week's episode of Hannibal had us cringing in our seats as it pulled us into deeper and darker places that you rarely get to see on TV in this capacity! 

Somehow, the show just delivers that sweet velvety-smooth amount of deliciousness that plays out like a game off chess between friends who neither want to win, lose or draw but play for the fun of the game - and boy do they play it well!

While Mads Mikkelsen has shined one of the brightest lights on the character of Hannibal [since Anthony Hopkins' incarnation in the Silence of the Lambs back in 1991] the rest of the cast have been magnificent in accentuating that atmosphere and mystery with horror, suspension and wonder to tease every palate! 

Michael Pitt's addition this season as Mason Verger has been fascinating to watch and the way we left him this week was shockingly clever while blasting the bigger picture wide open for his possible return as Hannibal is confirmed for a 3rd season! 

I have been terribly impressed this season and I have probably enjoyed it even more than the first - I honestly can not wait to see the season finale this week as we remember that opening scene in episode 1 [when Hannibal and Jack Crawford came to blows] and finally get to see the pay-off in how that subsequent scene plays out!

Will Hannibal reveal himself to Jack? Will we see another cast member fall? Will Hannibal slip away into the world for a cat-and-mouse chase to place a different angle on season 3? I'm not sure, but I am very much looking forward to finding out - and I do hope for some resolution between Will and Alana Bloom to put us all out of our misery!

Why is Talk on Circumcision SO Popular?

There is a lot of talk about circumcision on my Facebook feed this week and I have no particular idea why it has all-of-a-sudden become the trendy topic of choice but I am sure that sticks and stones are thrown, and friendships lost over the subject on what seems to be a daily basis!

I have 3 boys and 1 girl and my stance on circumcision is that it is a rather unnecessary procedure and not at all standard in many countries around the world - in fact, I had my first son in England and was never, ever asked if I wanted it done and was never offered the procedure and never went out of my way to go find someone who would do it because it just wasn't the done thing. Many men there and across Europe are perfectly happy as nature intended and they haven't lost anything from staying "in-tact". 

Of course, I don't particularly want a debate, here, but I am thinking out loud and I have to admit that I was a little terrified of the hospital giving my most recent son a circumcision without my consent when I had him in an American hospital where it seems to be [for want of a better term] "all-the-rage". 

I was adamant that I would not be having my son circumcised but when he was born he ended up in the NICU for a week, during which time, I was asked 6 or so times whether I was having a circumcision and had I forgotten to sign the paper to get it done - as though I might have forgotten something like that!? 

I couldn't possibly have decided to keep my child "in tact", could I? - I couldn't believe it! I knew that circumcision in America was almost just the done thing but I didn't realize how abnormal SOME places seem to see the process of just leaving it alone!! 

Now, don't get me wrong, I am not at all suggesting that you should all throw down the knife and step away from circumcision all-together just because I am not for it, because that isn't the way I think. I actually believe that it is up to each individual family to make the choices that they think best for their kin as they are going to be the people who live with those decisions and I will live with mine - no big deal. 

I do, however, wonder if sometimes people are just entering into getting it done just because everybody else does it or because they don't want their child to look different among their peers or because they want their sons to match their fathers - I honestly have no idea! However, as one Brian Leaf (author of Misadventures of a Parenting Yogirecently pointed out that son's don't always share the same hair color or noses and so why on earth do they really have to have the same penis!? The answer is, they really do not. 

I just would like to see people make an educated decision on circumcision, whether they've  done their research and decided that it is for them or whether they have decided that it is not. There are so many things that can go wrong with circumcision and it isn't cleaner to get it done, contrary to popular belief and it will still be appreciated by a future spouse whether it is cut or left alone - they all really do look the same when they're ready to do what they do best. 

1 of our 3 boy is cut and it really hasn't given him any kind of advantage over the other 2, he never asks about it and has never had to see the other's to care in the slightest about what he has down there! He doesn't see his father naked and so never has reason to see whether he does or does not "match" there, either! It just hasn't made a difference in his life at all and so I guess he should just be thankful that it was cut without incident and life carried on - it just isn't always that way for some babies and some do go through a terrible time of it with a botched procedure, so you really do have to weigh your options and see if the good outweighs the bad for you. 

Whatever you decide, don't ever let anybody else make you feel bad for choosing whatever it is that you choose for your children. We don't all have to agree, but we should all be able to make decisions that are right for us and ours, while respect that in others at the same time.

Life is too short to worry about someone else's decisions. C'est la Vie.

These blankets, which come in a set of 3, are larger than the majority of blankets that I have purchased for the same purpose since my son was born, but they are lighter, too!

My son has always loved to be swaddled as he spent a little time in the NICU and they did a very good job of keeping him snug while on the ward and so when he came home he was certainly more than happy to have me swaddling him, too!

They are not only soft enough to snuggle in but they make for a great shade on a sunny day, a perfect play area or even a burp cloth, which they may be used for here when we are done using them for everything else!

White Matcha Tea from Red Leaf Tea Look-See!

I recently had the chance to try out some White Matcha Tea from Red Leaf Tea, who offer their White Matcha in a familiar way, much as you might enjoy a regular Green Matcha. The smooth and creamy taste makes this tea a nice little treat and the taste is light and airy.

I have tried other kinds of Matcha teas before and I did find this one to be a lot less bitter than a culinary grade tea but I did enjoyed the White Matcha a great deal as a form of tea different from that of a regular bag.

This premium grade White Matcha, from Red Leaf Tea is thought to promote relaxation, is all-natural and unbleached - White Matcha is thought to also have some anti-wrinkle properties and, while I have no experience of that right now, I certainly like the idea!

Personally I prefer this tea over other Matcha teas that I have tried and it is particularly good in a Latte! A little goes a very long way and you really don't need a lot of it to make a decent cup.

There is a lot of history in Matcha tea, the process and enjoyment of it and I do like that I can enjoy it in this form in my own home.

I would say that if you are curious to try it then a small packet is more than enough to give you an idea of how much you enjoy it and Red Leaf Tea really does hit the spot.

I will give it a go for a while longer to get a good feel of any longer-term benefits and come back and update you all on that, but in the mean-time, it gets a thumbs up from me!
